WThis is a home-style interpretation of a drink featured on our latest cocktail list. Designed as a party-sized pre-mixed which is loaded with the essence associated with Christmas time, which makes it excellent for a holiday party. Reserve the remaining cordial you can use for morning drinks, sweets, or to make another batch of bikinis.
Bikini
Makes enough for 10 people
For the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Drink (makes 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
To prepare the Syrup: Place every items inside a saucepan, bring to a simmer, stirring to dissolve. Next, remove from the stove and let it to cool fully. Decant into an clean bottle, close it keeping it in the fridge, where it will keep for about four weeks.
Preparing the Batch Mix: Pour all the liquid ingredients into one large bottle, let it rest for an hour, then filter it best through a fine cloth, to ensure it's perfectly clear.
To serve: Pour 85ml of your batch mix to a stirring glass containing ice, gently stirring gently for a minute to cool it down. Filter into an frosted cocktail glass or similar, decorate with the cranberries and complete it by giving it a quick spritz with the mandarin essence above the glass.
